Nuala McInnes, Apprentice Chef - Macdonald Aviemore Resort

Originally from Perth, eighteen-year old Nuala McInnes moved north to take up a 12-month Hospitality and Chef Apprenticeship with Macdonald Aviemore Resort.
With a passion for the hospitality industry, Nuala first heard about the apprenticeship while at school, and went on to attend an assessment day – in which she was successful.
The broad nature of the apprenticeship means Nuala has spent time in different departments, giving her the opportunity to figure out where her strengths and interests lay. kitchen, restaurant and housekeeping departments. It was the kitchen she enjoyed most, discovering she had a flair for cooking and enjoyed learning from some of the area’s top chefs.
A typical day might include prep work and preparing dishes including tiramisu and brownies, as well as meals for the staff. As she has a knowledge of how the different areas work, Nuala can also use her skills to help out in other areas, including the cleaning down after service and organisation of the kitchen.
As well as on-the-job training, Nuala’s also worked towards professional qualifications including the Ready for Work Certificate, Health and Safety Training, Service Excellence Training and Fire Safety Training.
And Nuala’s career top tip? “Never give up. Sometimes it’s hard going but it’s all worth the effort in the end.”
Macdonald Aviemore Resort is aiming to build a talent pool of chefs and head chefs of the future through a partnership with Inverness College UHI aimed at providing school leavers aged 16-18 an opportunity to work towards a recognised qualification.
The Hospitality and Chef apprenticeship is one of many employment streams available through Macdonald Aviemore Resort, including the Trainee Chefs Programme, Hotelier Programme, Graduate Programme, placements, internships and work experience.
